Mac and cheese plans for courthouse square on hold

Anticipation has been building for Mac 123, a build-your-own mac and cheese shop set to open up on the courthouse square, but comfort food lovers might have to wait a little while longer.

Manager and executive chef Mike Kotlarski said the project is on hold after construction and funding caused delays to the original plans.

“It’s really a hiatus situation unfortunately,” Kotlarski said.

Kotlarski said investors need more time to procure funding for big ticket expenses, including equipment and beer and wine licensing.

Bill Reece, a local entrepreneur, said the delays, especially those involving construction, would have pushed the opening much closer to the holiday season, something they wanted to avoid.

Instead, Reece said the grand opening is now set for the start of 2020.

“You’ll still get your mac and cheese,” Reece said.

Community members rooting for the restaurant have said they see the planned restaurant as a sign that downtown revitalization efforts are working.

During the initial announcement about the restaurant in May, it was one of three awaited food stops in central Marion, along with Los Amores, a Mexican fusion restaurant in the Boston Hill Center, and Georgie’s Red Roof Cafe, which sat at the intersection of Sixth and Branson streets.

Georgie’s had a short run, opening in March and closing after only a few months. Los Amores has been open since May.
